Cherry Chocolate Chip Muffins

Makes 12

Equipment Required

  • Hand mixer

  • Non-stick muffin tin

  • Mixing bowls x 2

  • Paper cases

  • Rubber spatula

  • Cooling rack

  • Measuring cups

  • Oven gloves

  • Measuring spoons

Ingredients

​

  • 2 cups self-raising flour

  • ½ cup white sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1 cup milk

  • ¼ cup vegetable oil

  • 2 eggs

  • 1 teaspoon vanilla essence

  • 1 cup pitted cherries, quartered

  • 1 cup white chocolate chips

Method

​

  • Preheat the oven to 180°C.

  • Line muffin tin with paper cases.

  • In a medium bowl, combine the flour, sugar, baking powder and salt.

  • In another medium bowl, beat together the milk, oil, eggs and vanilla essence.

  • Pour the wet ingredients into the dry ingredients and mix together – be careful not to overmix.

  • Gently fold in the cherries and white chocolate chips.

  • Fill the muffin cases about three-quarters full with the batter.

  • Bake for 15 to 20 minutes, or until a toothpick inserted into the middle comes out clean.
