Ingredients

2 cups self-raising flour
-
½ cup white sugar
-
1 teaspoon baking powder
-
¼ teaspoon salt
-
1 cup milk
-
¼ cup vegetable oil
-
2 eggs
-
1 teaspoon vanilla essence

1 cup pitted cherries, quartered

1 cup white chocolate chips

Method
​

Preheat the oven to 180°C.

Line muffin tin with paper cases.

In a medium bowl, combine the flour, sugar, baking powder and salt.

In another medium bowl, beat together the milk, oil, eggs and vanilla essence.
-
Pour the wet ingredients into the dry ingredients and mix together – be careful not to overmix.
-
Gently fold in the cherries and white chocolate chips.
-
Fill the muffin cases about three-quarters full with the batter.

Bake for 15 to 20 minutes, or until a toothpick inserted into the middle comes out clean.
