Chocolate and Coconut Slice

Makes 16

Equipment Required

  • Weighing scales

  • Baking tin

  • Large mixing bowl

  • Baking paper

  • Small mixing bowl

  • Sieve

  • Measuring cups

  • Oven gloves

  • Large spoon

Ingredients

​

  • 3 Weetbix

  • 1 cup desiccated coconut

  • ½ cup caster sugar

  • 1 cup self-raising flour

  • 2 tablespoon cocoa

  • 150g unsalted butter

  • 1 teaspoon vanilla essence

  • 1½ cups icing sugar + 1 tablespoon cocoa

  • 3 tablespoons hot water

Method

​

  • Pre-heat oven to 180C.

  • Line baking tin with baking paper.

  • Place Weetbix in a large mixing bowl and break into small pieces. 

  • Add coconut and sugar to Weetbix and sift over flour and cocoa.  Stir well.

  • Melt butter in microwave for 30 seconds.  Pour butter over dry ingredients.  Mix well.

  • Spoon mixture into baking tin and press down to level.

  • Bake for 15 minutes or until firm to touch.

  • Sift icing sugar and cocoa into a small bowl. Add hot water and stir well.

  • Ice slice while still hot.

  • Cut into squares and enjoy!
