Ingredients
​

3 Weetbix
-
1 cup desiccated coconut
-
½ cup caster sugar
-
1 cup self-raising flour
-
2 tablespoon cocoa
-
150g unsalted butter
-
1 teaspoon vanilla essence
-
1½ cups icing sugar + 1 tablespoon cocoa
-
3 tablespoons hot water

Method
​

Pre-heat oven to 180C.

Line baking tin with baking paper.

Place Weetbix in a large mixing bowl and break into small pieces.

Add coconut and sugar to Weetbix and sift over flour and cocoa. Stir well.

Melt butter in microwave for 30 seconds. Pour butter over dry ingredients. Mix well.

Spoon mixture into baking tin and press down to level.

Bake for 15 minutes or until firm to touch.

Sift icing sugar and cocoa into a small bowl. Add hot water and stir well.

Ice slice while still hot.

Cut into squares and enjoy!
