Thai Chicken Sausage Rolls

Equipment Required

  • Weighing scales

  • Pastry brush                 

  • Large mixing bowl

  • Teaspoon

  • Chopping board

  • Baking sheet

  • Sharp knife

  • Baking paper

  • Measuring cups

  • Oven gloves

Ingredients

  • 200g chicken mince

  • 1 spring onion, finely sliced

  • ½ carrot, grated

  • ¼ cup breadcrumbs

  • ¼ cup fresh coriander, finely chopped

  • ½ teaspoon green Thai curry paste

  • ½ teaspoon minced ginger

  • 1 egg, beaten

  • 1 sheet puff pastry

  • 1 teaspoon cumin seeds

  • Beaten egg to seal & glaze

  • Salt & pepper

Method

  • Preheat oven to 200°C.

  • Cut puff pastry sheet in half to produce two rectangles.

  • Combine chicken mince, onion, carrot, breadcrumbs, chopped coriander, green Thai curry paste, ginger, egg and salt & pepper in a mixing bowl.  Mix well. 

  • Spoon mixture along the centre of the pastry rectangle in a straight line.

  • Brush one edge of the rectangle with egg.  Roll tightly to seal.

  • Cut roll into three equal lengths and place seam side down on a lined baking tray. 

  • Brush with beaten egg and sprinkle cumin seeds on top.

  • Bake for 20-25 minutes or until golden brown and cooked through.
