Thai Chicken Sausage Rolls

Ingredients

200g chicken mince
-
1 spring onion, finely sliced
-
½ carrot, grated
-
¼ cup breadcrumbs
-
¼ cup fresh coriander, finely chopped
-
½ teaspoon green Thai curry paste
-
½ teaspoon minced ginger
-
1 egg, beaten
-
1 sheet puff pastry
-
1 teaspoon cumin seeds
-
Beaten egg to seal & glaze

Salt & pepper

Method
​

Preheat oven to 200°C.

Cut puff pastry sheet in half to produce two rectangles.

Combine chicken mince, onion, carrot, breadcrumbs, chopped coriander, green Thai curry paste, ginger, egg and salt & pepper in a mixing bowl. Mix well.

Spoon mixture along the centre of the pastry rectangle in a straight line.

Brush one edge of the rectangle with egg. Roll tightly to seal.

Cut roll into three equal lengths and place seam side down on a lined baking tray.

Brush with beaten egg and sprinkle cumin seeds on top.

Bake for 20-25 minutes or until golden brown and cooked through.
