Easy Peasy Chocolate Brownies

Makes 16

Equipment Required

  • Weighing scales

  • Measuring spoons

  • Hand mixer

  • Measuring cups

  • Large mixing bowl

  • Non-stick baking tray

  • Small mixing bowl

  • Baking paper

  • Sieve

  • Cooling rack


  • 125g butter

  • ½ cup cocoa powder

  • 3 eggs

  • 2 teaspoons vanilla essence

  • 1½ cups caster sugar

  • ¾ cup self-raising flour

  • Icing sugar to finish


  • Set the oven to 180 C

  • Line the baking tray with baking paper - cut into the corners of the baking paper to give a crisp edge

  • Sift the cocoa powder into the large mixing bowl.

  • Melt the butter in the microwave for 1 minute

  • Add the melted butter to the cocoa powder in a steady stream stirring all the time to form a smooth consistency.

  • In the smaller mixing bowl whisk the eggs and vanilla essence together.

  • Add the egg mixture to the cocoa powder mixture and mix together well to form a smooth consistency.

  • Stir in the caster sugar until well combined.

  • Fold in the flour and stir gently until just combined.

  • Pour mixture into the baking tray and bake in the oven for 30-40 minutes.

  • To check that the brownie is cooked stick a skewer into the centre.  If the skewer comes out clean the brownie is cooked.  If the skewer comes out with mixture on it the brownie needs a little longer to bake.

  • When cooked lift the brownie out of the tin with the baking paper still attached. 

  • Allow the brownie to cool on a cooling rack.

  • When cool dust the brownie with icing sugar and cut into 20 squares

  • Enjoy!
