Easy Peasy Chocolate Brownies

Ingredients

125g butter
-
½ cup cocoa powder
-
3 eggs
-
2 teaspoons vanilla essence
-
1½ cups caster sugar
-
¾ cup self-raising flour
-
Icing sugar to finish

Method
​

Set the oven to 180 C
-
Line the baking tray with baking paper - cut into the corners of the baking paper to give a crisp edge

Sift the cocoa powder into the large mixing bowl.

Melt the butter in the microwave for 1 minute

Add the melted butter to the cocoa powder in a steady stream stirring all the time to form a smooth consistency.

In the smaller mixing bowl whisk the eggs and vanilla essence together.

Add the egg mixture to the cocoa powder mixture and mix together well to form a smooth consistency.

Stir in the caster sugar until well combined.

Fold in the flour and stir gently until just combined.

Pour mixture into the baking tray and bake in the oven for 30-40 minutes.

To check that the brownie is cooked stick a skewer into the centre. If the skewer comes out clean the brownie is cooked. If the skewer comes out with mixture on it the brownie needs a little longer to bake.

When cooked lift the brownie out of the tin with the baking paper still attached.

Allow the brownie to cool on a cooling rack.

When cool dust the brownie with icing sugar and cut into 20 squares
