Ingredients

100g butter
-
100g soft brown sugar
-
50g golden syrup
-
150g rolled oats
-
30g desiccated coconut
-
30g chopped dried apricots
-
2 small ripe bananas, mashed

Method
​

Pre-heat the oven to 180°C.

Line baking tin with baking paper.

Put the butter, brown sugar and golden syrup in a large bowl.

Heat slowly in the microwave, stirring occasionally, until the butter and sugar have melted.

Remove from the microwave and mix in the oats, desiccated coconut, chopped apricots and mashed bananas.

Spoon into the prepared tin and press gently into an even layer using the back of a large spoon.

Bake for 25 minutes or until golden around the edges.

Cool completely, then lift out of the tin and cut into 16 squares.
