Fruity Flapjacks

Makes 16

Equipment Required

​

  • Weighing scales

  • Fork for mashing

  • Large mixing bowls x 2

  • Baking tin 20cm x 20cm

  • Chopping board

  • Baking paper

  • Sharp knife

  • Oven gloves

  • Large spoon

Ingredients

​

  • 100g butter

  • 100g soft brown sugar

  • 50g golden syrup

  • 150g rolled oats

  • 30g desiccated coconut

  • 30g chopped dried apricots

  • 2 small ripe bananas, mashed

​

Method

​

  • Pre-heat the oven to 180°C.

  • Line baking tin with baking paper.

  • Put the butter, brown sugar and golden syrup in a large bowl.

  • Heat slowly in the microwave, stirring occasionally, until the butter and sugar have melted.

  • Remove from the microwave and mix in the oats, desiccated coconut, chopped apricots and mashed bananas.

  • Spoon into the prepared tin and press gently into an even layer using the back of a large spoon.

  • Bake for 25 minutes or until golden around the edges.

  • Cool completely, then lift out of the tin and cut into 16 squares.

  • Enjoy!
