Lemonade Scones

Makes 8

Equipment Required

  • Pastry/chopping board

  • Round cutters

  • Mixing bowl

  • Pastry brush

  • Measuring cups

  • Baking sheet

  • Measuring spoons

  • Baking paper

  • Measuring jug

  • Oven gloves

Ingredients

  • ½ cup cold lemonade (not diet)

  • ½ cup pouring cream

  • ¼ cup caster sugar

  • 2 cups self-raising flour

  • ½ cup sultanas (optional)

  • Pinch salt

  • Egg or milk to glaze

Method

  • Pre-heat oven to 220C.  Line baking sheet with baking paper.

  • Measure out all ingredients and mix together in a large mixing bowl.

  • Turn mixture out onto a lightly floured pastry/chopping board.

  • Very gently press the mixture down until it is approximately 3cm thick – do not roll the mixture.

  • Use a round cutter to cut out scones and place on baking sheet.

  • Glaze with egg or milk.

  • Bake for 12-15 minutes or until golden brown and allow to cool.

  • Enjoy!
