Passionfruit Melting Moments

Makes 12-15

Equipment Required

  • Electric hand mixer

  • Baking tray

  • Measuring cups

  • Baking paper

  • Mixing bowl

  • Cooling rack

  • Dessert spoon

  • Oven gloves

  • Spatula

Ingredients

​

Melting Moments Ingredients

  • 125g butter, softened

  • ¾ cup plain flour

  • ¼ cup icing sugar

  • 1/3 cup vanilla custard powder

​

Passionfruit Filling Ingredients

  • 60g butter, softened

  • 1 cup icing sugar

  • 2 dessert spoons passionfruit pulp

​

Method

​

  • Preheat the oven to 160 ºC. Line a baking tray with baking paper.

  • Place butter in a mixing bowl and beat until pale and creamy using an electric hand mixer. Add flour, icing sugar and vanilla custard powder.  Stir with a spatula until well combined.

  • Hand-roll mixture into small balls.  Place on lined tray about 3cm apart.  Use a fork dusted with vanilla custard powder to gently flatten to a 2cm diameter. Bake for 15 minutes or until lightly golden and cooked through. Set aside on a cooling rack to cool.

  • To make the filling, use an electric hand mixer to beat the butter until pale and creamy. Add the icing sugar and passionfruit pulp and beat until well combined.

  • Spread a little filling onto the underside of a biscuit. Sandwich together with a second biscuit. Repeat with remaining biscuits and filling.
