125g butter, softened

¾ cup plain flour
-
¼ cup icing sugar

1/3 cup vanilla custard powder

Passionfruit Filling Ingredients

60g butter, softened
-
1 cup icing sugar
-
2 dessert spoons passionfruit pulp

Method

Preheat the oven to 160 ºC. Line a baking tray with baking paper.

Place butter in a mixing bowl and beat until pale and creamy using an electric hand mixer. Add flour, icing sugar and vanilla custard powder. Stir with a spatula until well combined.

Hand-roll mixture into small balls. Place on lined tray about 3cm apart. Use a fork dusted with vanilla custard powder to gently flatten to a 2cm diameter. Bake for 15 minutes or until lightly golden and cooked through. Set aside on a cooling rack to cool.

To make the filling, use an electric hand mixer to beat the butter until pale and creamy. Add the icing sugar and passionfruit pulp and beat until well combined.

Spread a little filling onto the underside of a biscuit. Sandwich together with a second biscuit. Repeat with remaining biscuits and filling.
