  • Baking tray

  • Large mixing bowl

  • Baking paper

  • Tablespoon

  • Cooling rack

  • Pastry board

  • Oven gloves

  • Pastry brush

Ingredients

  • 4 cups self-raising flour plus a pinch of cayenne pepper

  • 100g chilled unsalted butter, cubed

  • 150g diced ham

  • 3 spring onions, finely sliced

  • ½ cup combination of red capsicum, sun dried tomatoes & olives, finely chopped (optional)

  • 1½ cups milk plus extra to brush

  • Salt and pepper

Method

  • Pre-heat the oven to 180°C.

  • Place the flour and butter into a large bowl.  Rub the butter into the flour using your fingertips until it resembles fine breadcrumbs.

  • Using a metal spoon fold the milk into the dry mixture until just combined - do not overmix.

  • Turn out the mixture onto a floured pastry board and flatten gently with your hand to a thickness of 2cm.

  • Cut out heart shaped scones and place on a baking sheet lined with baking paper.

  • Brush the top of the scones with extra milk and sprinkle over some extra cheese.

  • Bake for 20-25 minutes or until golden brown.

  • Enjoy!
