Savoury Valentine Scones

Ingredients
​

4 cups self-raising flour plus a pinch of cayenne pepper
-
100g chilled unsalted butter, cubed
-
150g diced ham
-
3 spring onions, finely sliced
-
½ cup combination of red capsicum, sun dried tomatoes & olives, finely chopped (optional)
-
1½ cups tasty cheese, grated plus extra for topping
-
1½ cups milk plus extra to brush

Salt and pepper

Method

Pre-heat the oven to 180°C.

Place the flour and butter into a large bowl. Rub the butter into the flour using your fingertips until it resembles fine breadcrumbs.

Stir in the cayenne pepper, ham, spring onions, capsicum, sun dried tomatoes, olives and cheese. Season well with salt and pepper.

Make a well in the centre of the mixture and add the milk.

Using a metal spoon fold the milk into the dry mixture until just combined - do not overmix.

Turn out the mixture onto a floured pastry board and flatten gently with your hand to a thickness of 2cm.

Cut out heart shaped scones and place on a baking sheet lined with baking paper.

Brush the top of the scones with extra milk and sprinkle over some extra cheese.

Bake for 20-25 minutes or until golden brown.
