Italian Meatballs with Pasta and Tomato Sauce

2 tablespoons olive oil

700ml tomato passata sauce
-
400g tin diced tomatoes
-
1 onion, finely diced
-
25g slice salami
-
1 teaspoon dried oregano
-
Salt and pepper

4 cups cooked pasta
-
1/4 cup tasty grated cheese

250g beef sausage meat
-
250g pork mince
-
1 teaspoon garlic puree
-
1 egg, lightly beaten

1/4 cup breadcrumbs

Method
​

For meatballs, place sausage meat, pork mince, garlic puree, beaten egg and breadcrumbs in a bowl and season with salt and pepper. Mix well to combine. Using a desert spoon, form mixture into balls and set to one side.

Heat oil in a large electric frying pan. Add meatballs and cook, turning occasionally, for 5 minutes or until well browned. Remove from pan and set aside.

Add onion to pan and cook over a medium heat for 5 minutes or until tender. Add passata, tinnned tomatoes, salami and oregano and simmer for 5 minutes. Return meatballs to pan with tomato sauce and bring to the boil. Cover and cook for 15 minutes or until sauce is thickened.

Meanwhile, cook pasta in a large saucepan of boiling salted water until al dente.

Serve meatballs either on top of freshly cooked pasta sprinkled with parmesan cheese or combine pasta and meatballs in an ovenproof dish topped with grated cheese and bake in the oven for 20 minutes.
