Passionfruit Slice

Ingredients

Base Ingredients

1 cup self-raising flour
-
1 cup desiccated coconut
-
½ cup caster sugar
-
125g butter, melted
​
Topping Ingredients

395g tin condensed milk
-
½ cup strained fresh lemon juice
-
1/3 cup passionfruit pulp

Method
​

Pre-set the oven to 180°C. Line the baking tray with baking paper - cut into the corners of the baking paper to give a crisp edge

Combine self-raising flour, desiccated coconut and melted butter in large mixing bowl. Mix well.

Spread the mixture into the baking tin and press down smoothly using the back of a spoon

Bake for 15 minutes until lightly browned

For the topping, combine the condensed milk, lemon juice and passionfruit pulp in a bowl and mix well until smooth

Pour over the cooled base and and bake for a further 15 minutes or until just set. Allow the slice to cool in the tin.

Lift the slice out of the tin when cool and cut into squares. Enjoy!
