Passionfruit Slice

Makes 20

Equipment Required

  • Weighing scales

  • Non-stick baking tray

  • Large mixing bowls x 2

  • Baking paper

  • Measuring cups

  • Cooling rack        

  • Large cooking spoons

  • Oven gloves


Base Ingredients

  • 1 cup self-raising flour

  • 1 cup desiccated coconut

  • ½ cup caster sugar

  • 125g butter, melted

Topping Ingredients

  • 395g tin condensed milk

  • ½ cup strained fresh lemon juice

  • 1/3 cup passionfruit pulp


  • Pre-set the oven to 180°C.  Line the baking tray with baking paper - cut into the corners of the baking paper to give a crisp edge

  • Combine self-raising flour, desiccated coconut and melted butter in large mixing bowl.  Mix well.

  • Spread the mixture into the baking tin and press down smoothly using the back of a spoon

  • Bake for 15 minutes until lightly browned

  • For the topping, combine the condensed milk, lemon juice and passionfruit pulp in a bowl and mix well until smooth

  • Pour over the cooled base and and bake for a further 15 minutes or until just set.  Allow the slice to cool in the tin. 

  • Lift the slice out of the tin when cool and cut into squares.  Enjoy!
