Strawberry Danish Pastries

Makes 9

Equipment Required

  • Pastry board

  • Desert spoon        

  • Small mixing bowl

  • Teaspoon

  • Sharp knife

  • Baking sheet

  • Pastry brush

  • Baking paper

  • Whisk

  • Oven gloves

  • Sieve


  • 1 sheet of ready rolled puff pastry

  • 5 strawberries cut in half lengthways

  • 3 heaped desert spoons cream cheese

  • 3 desert spoons caster sugar

  • 2 teaspoons vanilla essence

  • 1 egg, beaten

  • Icing sugar to dust


  • Preheat oven to 200°C.

  • Combine cream cheese, caster sugar and vanilla essence in a small mixing bowl.  Mix well.

  • Cut puff pastry into 9 equal squares.

  • Fold each square in half to form a triangle.

  • Make an incision in the pastry 1cm in from the unfolded edges leaving a gap of 1cm at the point (see diagram below).

  • Open up triangle to form a square. 

  • Fold opposite points of square over each other to form a diamond shape.

  • Fill centre with one teaspoon of cream cheese mixture and top with half a strawberry.

  • Place on a lined baking sheet and brush pastry with a little beaten egg.

  • Bake in the oven for 20 minutes or until golden brown.

  • Cool and enjoy!
