Strawberry Danish Pastries

Ingredients

1 sheet of ready rolled puff pastry
-
5 strawberries cut in half lengthways
-
3 heaped desert spoons cream cheese
-
3 desert spoons caster sugar
-
2 teaspoons vanilla essence
-
1 egg, beaten
-
Icing sugar to dust

Method

Preheat oven to 200°C.

Combine cream cheese, caster sugar and vanilla essence in a small mixing bowl. Mix well.

Cut puff pastry into 9 equal squares.

Fold each square in half to form a triangle.

Make an incision in the pastry 1cm in from the unfolded edges leaving a gap of 1cm at the point (see diagram below).

Open up triangle to form a square.

Fold opposite points of square over each other to form a diamond shape.

Fill centre with one teaspoon of cream cheese mixture and top with half a strawberry.

Place on a lined baking sheet and brush pastry with a little beaten egg.

Bake in the oven for 20 minutes or until golden brown.
