Thai Spinach and Feta Rolls

Ingredients
​
-
100g feta cheese, diced
-
100g frozen spinach (defrosted)
-
½ cup onion, finely diced
-
1 egg, beaten plus extra for glaze
-
½ cup fresh coriander, chopped
-
½ teaspoon green Thai curry paste
-
1 sheet puff pastry
-
1 teaspoon cumin seeds
-
Salt & pepper

Method
​

Preheat oven to 200°C.

Cut puff pastry sheet into two equal rectangles.

Place defrosted spinach between paper towel and squeeze out the liquid.

Combine feta, spinach, egg, coriander and salt & pepper in a mixing bowl. Mix well.

Spoon mixture along the centre of the pastry rectangle in a straight line.

Brush one side of the rectangle with water. Roll tightly to seal.

Cut roll into three equal lengths and place seam side down on a lined baking tray.

Brush with beaten egg and sprinkle cumin seeds on top.

Bake for 20-25 minutes or until golden brown and cooked through.
