Thai Spinach and Feta Rolls

Makes 12

Equipment Required

  • Weighing scales

  • Pastry brush

  • Large mixing bowl

  • Teaspoon

  • Chopping board

  • Baking sheet

  • Sharp knife

  • Baking paper

  • Paper towel

  • Oven gloves

Ingredients

​

  • 100g feta cheese, diced

  • 100g frozen spinach (defrosted)

  • ½ cup onion, finely diced

  • 1 egg, beaten plus extra for glaze

  • ½ cup fresh coriander, chopped

  • ½ teaspoon green Thai curry paste

  • 1 sheet puff pastry

  • 1 teaspoon cumin seeds

  • Salt & pepper

Method

​

  • Preheat oven to 200°C.

  • Cut puff pastry sheet into two equal rectangles.

  • Place defrosted spinach between paper towel and squeeze out the liquid.

  • Combine feta, spinach, egg, coriander and salt & pepper in a mixing bowl.  Mix well.

  • Spoon mixture along the centre of the pastry rectangle in a straight line.

  • Brush one side of the rectangle with water.  Roll tightly to seal.

  • Cut roll into three equal lengths and place seam side down on a lined baking tray. 

  • Brush with beaten egg and sprinkle cumin seeds on top.

  • Bake for 20-25 minutes or until golden brown and cooked through.

  • Enjoy!
