Corn Fritters

Makes 12

Equipment Required

  • Electric frying pan

  • Measuring cups 

  • Hand mixer

  • Chopping board

  • Large mixing bowl

  • Sharp knife

  • Small mixing bowl

  • Spatula

  • Desert spoon     


Corn Fritter Ingredients

  • 1 cup self-raising flour

  • 2 eggs

  • ½ cup milk

  • 1 tin x 420g corn kernels, drained

  • ½ cup diced ham (optional)

  • 1 spring onion, finely chopped

  • 100g feta cheese, crumbled

  • 2 desert spoons grated parmesan cheese

  • Small knob of butter + 1 desert spoon canola oil

  • Salt & Pepper

Avocado & Tomato Salsa Ingredients

  • ½ avocado peeled & diced

  • 2 cherry tomatoes, diced

  • 1 desert spoon balsamic vinegar

  • 1 desert spoon finely chopped coriander


  • Place flour in a large mixing bowl and make a well in the centre.

  • Beat eggs and milk together in a small mixing bowl using a hand mixer.  Season with salt and pepper. 

  • Gradually pour egg and milk mixture into the flour, stirring gently to combine.

  • Fold in corn, ham, spring onion, feta & parmesan.  Don’t over-mix or the fritters will be tough.

  • Melt butter and oil in electric fry pan and turn heat up to a medium temperature.

  • Drop spoonfuls of mixture into the pan and cook for about 2-3 minutes each side.  Turn fritters regularly with a spatula until golden brown and cooked through.  Repeat with the remaining fritter mixture.

  • Combine avocado & tomato salsa ingredients in a small bowl and dress with vinaigrette.

  • Enjoy!
