Ingredients
​
Corn Fritter Ingredients
-
1 cup self-raising flour
-
2 eggs
-
½ cup milk
-
1 tin x 420g corn kernels, drained
-
½ cup diced ham (optional)
-
1 spring onion, finely chopped
-
100g feta cheese, crumbled
-
2 desert spoons grated parmesan cheese
-
Small knob of butter + 1 desert spoon canola oil
-
Salt & Pepper

Avocado & Tomato Salsa Ingredients
-
½ avocado peeled & diced
-
2 cherry tomatoes, diced
-
1 desert spoon balsamic vinegar
-
1 desert spoon finely chopped coriander

Method

Place flour in a large mixing bowl and make a well in the centre.

Beat eggs and milk together in a small mixing bowl using a hand mixer. Season with salt and pepper.

Gradually pour egg and milk mixture into the flour, stirring gently to combine.

Fold in corn, ham, spring onion, feta & parmesan. Don’t over-mix or the fritters will be tough.

Melt butter and oil in electric fry pan and turn heat up to a medium temperature.

Drop spoonfuls of mixture into the pan and cook for about 2-3 minutes each side. Turn fritters regularly with a spatula until golden brown and cooked through. Repeat with the remaining fritter mixture.

Combine avocado & tomato salsa ingredients in a small bowl and dress with vinaigrette.
