Mediterranean Crown

Makes 1

Equipment Required

  • Plate 24cm diameter

  • Pastry brush

  • Small mixing bowl 10 cm diameter

  • Baking sheet

  • Chopping board

  • Baking paper

  • Sharp knife

  • Oven gloves       

  • Teaspoon           


  • 1 sheets ready rolled puff pastry

  • 2 teaspoons green pesto

  • ¼ cup sliced buffalo mozzarella cheese

  • ¼ cup diced feta cheese

  • ¼ cup diced chorizo sausage

  • 3 cherry tomatoes, sliced

  • 3 olives, sliced

  • Mixed Italian herbs

  • Beaten egg or milk to glaze


  • Preheat oven to 200°C

  • Cut out a puff pastry round using a plate as a guide to 24cm diameter.

  • Place upturned mixing bowl in the centre of the pastry round.

  • Spread pesto thinly on pastry around the mixing bowl.

  • Place the chorizo, tomatoes, mozzarella and feta on top of the pesto. Sprinkle with Italian herbs.

  • Gently lift the mixing bowl off the pastry and make 4 diagonal cuts to form 8 wedge shapes.

  • Gently lift up the outer edge of the large pastry circle to create a raised border.

  • Gently lift the point of each pastry wedge and pull it across the toppings to meet the outer edge.  Press pastry together.

  • Lightly brush pastry with a little beaten egg.

  • Dot sliced olives on top of each triangle to look like jewels.

  • Bake in the oven for 20mins at 200°C until golden brown
