Spinach and Cheese Pinwheels

Ingredients

1 sheet puff pastry
-
50g ricotta cheese
-
50g feta cheese
-
50g frozen spinach (defrosted)
-
1 egg (beaten)
-
1 tsp fresh dill
-
¼ cup tasty cheddar cheese, grated

Salt & pepper

Method
​

Preheat oven to 200°C.

Place defrosted spinach between paper towel and squeeze out the liquid.

Combine ricotta, feta, spinach, egg, dill and salt & pepper in a mixing bowl and mix well.

Spread mixture evenly over the puff pastry sheet leaving a 1cm gap at the top.

Brush the gap with beaten egg and roll the puff pastry firmly to form a log shape ensuring the seal is on the underside.

Cut the log into 8 slices about 3cm thick.

Place slices flat on the baking sheet and top with a little grated cheddar cheese.

Bake for 20-25 minutes until golden brown.

Allow to cool.
