Spinach and Cheese Pinwheels

Makes 8

Equipment Required

  • Weighing scales

  • Measuring cups

  • Hand mixer

  • Pastry brush                          

  • Large mixing bowl

  • Baking sheet

  • Chopping board

  • Baking paper

  • Sharp knife

  • Oven gloves

  • Measuring spoons

Ingredients

​

  • 1 sheet puff pastry

  • 50g ricotta cheese

  • 50g feta cheese

  • 50g frozen spinach (defrosted)

  • 1 egg (beaten)

  • 1 tsp fresh dill

  • ¼ cup tasty cheddar cheese, grated

  • Salt & pepper

Method

​

  • Preheat oven to 200°C.

  • Place defrosted spinach between paper towel and squeeze out the liquid.

  • Combine ricotta, feta, spinach, egg, dill and salt & pepper in a mixing bowl and mix well.

  • Spread mixture evenly over the puff pastry sheet leaving a 1cm gap at the top.

  • Brush the gap with beaten egg and roll the puff pastry firmly to form a log shape ensuring the seal is on the underside.

  • Cut the log into 8 slices about 3cm thick.

  • Place slices flat on the baking sheet and top with a little grated cheddar cheese.

  • Bake for 20-25 minutes until golden brown.

  • Allow to cool.

  • Enjoy!
