Ingredients

125g butter, melted
-
1¼ cups soft brown sugar

1 egg
-
1 teaspoon vanilla essence
-
1¾ cups self-raising flour
-
1 teaspoon baking powder
-
1 cup dark chocolate broken into chips

Method

Pre-heat oven to 160°C. Line a baking sheet with baking paper.

Place the butter in a small bowl and melt in the microwave - allow to cool slightly.

Pour melted butter into a large bowl and stir in the brown sugar until smooth and almost dissolved.

Lightly beat the egg and stir into the sugar along with the vanilla essence.

Gradually mix flour and baking powder into the sugar mixture until well combined.

Roughly chop dark chocolate into chips and stir into the mixture.

Drop rounded tablespoons of cookie mixture onto the baking sheet.

Bake for 18-20 minutes or until golden. Don’t worry if the cookies look very soft – they will harden as they cool.

Allow the cookies to cool slightly before transferring them to a cooling rack.
