Mini Banana Loaves with Cream Cheese Frosting

Equipment Required

Weighing scales
-
Hand mixer
-
Large mixing bowl
-
Large spoon
-
Non-stick loaf tins
-
Sieve
-
Oven gloves

Banana Loaf Ingredients
​

100g Soft spread
-
100g Caster Sugar
-
2 Eggs
-
100g Self Raising Flour
-
2 Squishy mashed bananas (over ripe bananas are best for this recipe because they have so much flavour)

Canola spray

Method
​

Set the oven to 180 degrees Celsius
-
Weigh out all your ingredients
-
Spray each of the loaf tins with a small amount of Canola
-
Mix the spread and sugar together in a large bowl using the hand mixer

Add the eggs and mashed bananas to the bowl and mix together well

Add the self raising flour to the bowl and mix well
-
Spoon the mixture into the loaf tins and fill to approximately 2/3 full
-
Bake in the oven for approximately 20 minutes

To check that the loaves are cooked, stick a skewer into the centre of each loaf. If the skewer comes out clean the loaves are cooked. If the skewer comes out with mixture on it the loaves need a little longer to bake.

Cream Cheese Frosting Ingredients

115g Soft cream cheese

1/4 cup Softened butter
-
1.5 cups long sugar - sieved

1 tablespoon thick cream
-
1 teaspoon Vanilla extract

Method
​

Mix cream cheese and butter together
-
Gradually add sieved icing sugar to cream cheese and butter mixture
-
Add cream and vanilla extract and stir well
-
Top each loaf generously with frosting.
